Violetta to Debut the "Etta" Mobile Kitchen

Distant Sun Restaurants, Inc.' s still under construction Violetta, will debut its mobile kitchen, the "Etta,"
on January 18th, 2010, at Director Park in downtown Portland.
Etta was originally intended to supplement Violetta's quick service cafe on Director Park, by offering a
"skinny" version of its locally inspired menu of natural Oregon beefburgers and franks, garden fresh salads
and soups, and hand cut fries to the many Portlanders attending outdoor events throughout the metro area
during the summer months. Due to a construction fire over the 2009 Thanksgiving holiday weekend which
resulted in significant damage to Violetta's home address, Etta will now go live months before the cafe's.
doors swing open to the public for the first time. Violetta, bustling with the sounds of reconstruction, is
now looking towards an early summer debut.
Selected by Portland Parks & Recreation in 2008, the Violetta concept was meant to bring downtown
Portland's working core, residents and visitors a quality, fast-casual food experience in the City's newest
and most anticipated modem park setting.
The menu offers made-from-scratch "fast" foods that utilize only premium, "slow food" ingredients--
northwest sourced meats, local farm fresh vegetables "in season," and dairy and bread products that have
been raised, grown or produced with care and respect for organic and sustainable practices. The entire
menu is served in 100% compostable materials.
Violetta's mission is to provide guests with fresh, high quality seasonal food in a fast-paced and friendly
setting, promoting farm direct-kitchen practices that support local independent growers, ranchers, food and
beverage artisans and suppliers.
Violetta will open late Mayor early June of2010 in the new Simon & Helen Director Park ("Director
Park") at 877 SW Taylor Street in downtown Portland, Oregon. Violetta will serve carry-out and dine-in
breakfast, lunch and dinner seven days a week from 7:00 am to II :00 pm, and features walk-up espresso
and coffee service from 7:00 am to 9:00 pm. Catering and Box Lunch deliveries are available by calling
